Since 2004, Le Merou and its sought after kitchen are managed by head chef Grischa Jankowiak. Finishing his cook apprenticeship in 1996 at the Dom Hotel itself, he quickly moved up the ranks, successfully completing all positions between 1997 and 1999. In 1999 he began at restaurant Vendôme of the Grand-hotel Schloss Bensberg, gaining five years of valuable kitchen experience with Michelin star chef Joachim Wissler. Prior to returning to the Dom Hotel, head chef Jankowiak spent some time with award winning 17 Gault Millau points and Michelin Star rated restaurant Da Bruno of Cologne and chef Raffaele Cesare Cannizzaro.
